Experts can’t seem to agree on the health assurances of these and other bottled oils. While they’re figuring it out, stick with the fats you—or a friend—- can make in your own kitchen.

Here are some general guidelines:

GOOD: Source carefully as grocery-available oils may be heat processed or only available in plastic bottles—-all components of reduced nutritional value.
BETTER: Organic, fresh, cold-pressed in dark glass containers.
BEST: Local, organic, fresh, cold-pressed, extra-virgin in dark glass containers.
